The Culinary Culture of Uttar Pradesh includes a unique mixture of Mughal cuisines clubbed with foods that are typical of Uttar Pradesh. If Agra is famous for its Tandoori and Mughlai preparations then the sweets of Mathura and Benaras will drive you crazy. Mathura is famous for its pedas, rabris, kheer, aloo chaat, dubkiwale aloo, khatta meetha kaddo and keshari mishthan. The Culinary Culture of Uttar Pradesh have thousands of legends associated with them if the Mughlai pulao and chicken ere a favorite of Emperor akbar then the pedas and butter preparations of Mathura were savored by none other than lord Krishna himself.
Matar Polao, Lucknoi koftas, Aloo Dum Awadhi, Dal Kachori are some of the most famous vegetarian preparations in Uttar Pradesh. That does not mean Uttar Pradesh cuisine is devoid of non vegetarian preparations!

Besides Kundan Kaliya which is a famous mutton preparation is also a major culinary dish of Uttar Pradesh. Turmeric, saffron, ginger,onion, clove, elaichi, methi and bayleaves and garlic are some of the most essential ingredients used in the preparation of cuisines of Uttar Pradesh. Nehari Khaas and Nargisi Koftas are also an integral part of the Culinary Culture of Uttar Pradesh. Nargis Kofta is an interesting food brought from the land of Awadh. This kofta is a favorite for all the eggetarians of the world. Nargisi Kofta wraps hard boiled eggs in mince and then it is deep fried to give it the original essence of a Mughlai khana.
